Wright side of life: Veggie version of enchiladas for tasty campsite cooking

We are all waiting to hear when we can get some sort of holiday booked, it is that time of year when I am mad keen to get the caravan back on the road.

I do work with the Caravan and Motorhome Club from time to time, with recipes, videos and so on. This week in a normal world it would be the members' week with lots of things going on.

This year it is all virtual with events and talks on the club website and YouTube. I made a fun video with a campsite recipe, Enchiladas!

Enchilada is a Mexican dish made with tortilla wraps. The wraps are normally filled with chilli and then rolled into tubes, placed in a dish, and covered with a cheese sauce and baked. A bit like a Mexican version of lasagne.

I wanted to make a vegetarian version which was also store cupboard friendly, which makes it great for a quick campsite meal.

The filling starts with a gently fried onion, a chopped red pepper, and a few sliced mushrooms. Season this with chilli flakes to taste and a squirt of tomato ketchup.

I like to add a pinch of cinnamon and my very quirky ingredient, dark chocolate. If you add a few chunks it really gives a great richness to the sauce. The Azteks used cocoa or chocolate in lots of their cooking.

Next up is a couple of tins of chopped tomatoes and a can of mixed beans...you could just use baked beans if you wanted to. I like to add a glug of red wine and then salt and pepper.

You just bubble this up for about twenty minutes until it is nice and thick. Take a pack of wraps, fill each one with sauce, roll and lay in a baking dish.

You can cover all the wraps with any left-over sauce, scatter with some grated cheese and bake in a hot oven until it is all piping hot. It is really delish!

Next week we will be into March. St David’s day is on Monday and all the gorgeous daffodils will be coming out to say hello.

We have so much to look forward to this spring....longer days, milder weather and hopefully the world starting to open its doors once again!
